RECIPE: SPINACH AND FETA DIP
It’s time to get a little ‘snacky’ with this clever and lovely little dip. Uncomplicated and adds a little pop to any dish and of course, just for the snacking!
INGREDIENTS
250g feta - roughly chopped
2 large handfuls of fresh baby spinach
1/4 olive oil
1-2 cloves of garlic
2 tablespoons mint & chives
pinch chilli flakes
METHOD
This is the best part, through it all in a blender and whizz until your heart’s content, or until it’s lovely thick and creamy! Throw it in the fridge for 30 mins or so and you’re sorted.
You can also swap the spinach for:
Roasted Beetroot or roasted carrots. Swap the mint for fennel seeds - go nuts with your flavour combos or what you have in the fridge.
